The Missing Ingredient (Pizza, Quesadilla, or Wrap)…SPINACH!

For a whopping 7 calories per cup, spinach is a great addition to just about anything you are making. This recipe is for you to use your imagination and create new dishes in your week.

The ingredient list is short and sweet:

1 egg

1/4 cup shredded cheese of your choice

1 cup fresh spinach.

Preheat the oven to 425 degrees. Put all 3 ingredients into your blender, cover, and blend (uou may have to use a spatula to scrape the sides of the blender to get the ingredients to blend completely). Once there are no spinach leaves visible (think baby food consistency), remove the mixture from the blender onto a cookie sheet that is lined with parchment paper. Spread the mixture over a large area of the parchment paper (it will spread out a lot more than you think, so be sure to spread it thin and evenly). Once spread, place in the oven and bake for 15 to 20 minutes.

Now you have something that can be turned into a quesadilla by folding in half and putting your favorite stuffings in, a pizza crust that you can top however you choose, or put it in the fridge and allow it to cool so that you can use it to wrap up lunch meet for a tasty snack.
