Cauliflower Mash

When we think of Minnesota, we think meat and potatoes.... (who doesn't love that!), however the potato is not always in line with how we need to be eating. Which leads us to the aforementioned cauliflower mash...the Lean Man's (or woman's) mashed potatoes. A super simple and quick side dish to make for dinner tonight! All you need is a head of cauliflower.

Cut up and steam a head of cauliflower for about 15 - 20 minutes on the stove top, or buy a bag of frozen cauliflower and toss it in the microwave as recommended.

Put the steamed cauliflower in the blender with 1/4-1/2 cup of water, depending on the amount of cauliflower you have. Error on the side of not enough water, as it can get to watery fast if too much water is added.

Blend it until mashed potato texture. Watch the blender in case you need to scrape down the sides to keep things moving.

That's it!

Scrape it into a bowl and add plain Greek yogurt to taste. From here spices; crumbled bacon, cheese, garlic, or however you normally like mashed potatoes. The possibilities are somewhat endless, so get creative!

By replacing potatoes with cauliflower, in a half cup serving, you save approximately 53 calories and 13g of carbohydrates. BONUS...you get a ton of vitamin C, potassium, fiber, and vitamin K!
