Who doesn't love a slice...or 4...of banana bread, RIGHT!?!But instead of rocking the "same old" recipe, how about you give this a try and add some protein to that tasty little snack!A huge thank you to Niki M. for sharing this recipe with us!
Protein Banana Bread (gluten-free)
What you will need:
1 cup Quest protein powder
1/2 cup organic coconut flour
1/2 t organic cinnamon
3/4 t baking soda
1/4 cup organic cacao nibs
pinch of salt
1 cup organic egg whites
1/2 t organic vanilla extract
1/4 cup organic raw honey
1 cup mashed ripe banana
1/2 cup organic ghee, melted
How to prepare:
Preheat oven to 350 degrees.
Spray loaf pan with coconut oil. Place a cute piece of parchment paper (cut to fit, if needed) in the bottom of loaf pan.
In a large bowl, combine protein powder, coconut flour, cinnamon, baking soda, cacao nibs, and pinch of salt.
In a medium bowl, add egg whites, vanilla extract, raw honey, and whisk. Add mashed banana to the mixture and whisk until well-combined.
Pour the liquid ingredients into the dry mix, and stir until thoroughly combined. Add melted ghee and stir until well-combined.
Spoon batter into greased loaf pan. Spread evenly.
Place in oven for 45-50 minutes, or until a toothpick comes out clean.
Let cool slightly. Run a knife around edges. Carefully remove, and let cool on a wire rack.
