Recipe: CITRUS PORK CARNITAS

Ingredients:

- 6-ish pounds frozen bone-in pork shoulder roast

- 1/2 cup lime juice

- 1/2 cup lemon juice

- 1 heaping tablespoon ground cumin

- 1 tablespoon garlic powder

- 1/2 tablespoon salt

- 1 teaspoon ground coriander

- 1 teaspoon cayenne pepper

Instructions:

1. Place frozen roast in crockpot with lime and lemon juices

2. Sprinkle seasonings on top of roast

3. Cook overnight (about 12 hours) on low

4. After 12 hours, take bones out of meat and cut up so meat can cook the rest of the way.

5. Leave on low for another 6-8 hours
